How far ahead of time can I cut up chicken and vegetables and put them on skewers for bbq chicken kabobs?

I am grilling them Saturday evening and I’d like to get them completely assembled Friday morning and keep them in the fridge, but I wonder if the vegetables (green and red peppers) and pineapple chunks would go bad in that amount of time.

Keep them covered and they should be fine. Just keep in mind that the veggies, and pineapple will most likely marinate the chicken to their flavor. Just in case you may not like that.

Not as long as you put them in an air tight container or wrap them in Saran wrap. If you have a large enough container you can also marinate your kabobs all day Friday . Good stuff. I know you want to know what to marinate them with. Would use some terriyaki marinade or some zesty Italian salad dressing.. Good luck

You can prepare the night before as long as you keep them covered an in the fridge.
